Banana Rice Pudding

How about a healthy, warm dessert on a cold rainy day? You can start this dessert before dinner and it will be ready when you’ re done. Your kids will love it!

Banana Rice Pudding

Ingredients:
1 medium banana
¼ cup water
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon cinnamon
2 cups cooked brown rice
1 cup milk or coconut milk

Directions:
Combine the banana, water, honey, vanilla and cinnamon in a medium sauce pan, bring to a boil and stir.  Reduce hat and simmer for an additional 5 minutes. Add the rice and milk and mix well.  Bring to a boil again and simmer for 10 minutes more, stirring occasionally.
